This cheesecake uses a traditional graham cracker crust.  You can easily make your own but for the ultimate ease, you can buy a prepared crust. 

For Homemade Crust:

- 1 1/2 cups graham cracker crumbs

- 1/4 cup granulated sugar

- 6 Tablespoons unsalted butter, melted

You'll need a heavenly blend of fresh mixed berries like strawberries, blueberries, raspberries, and blackberries. These berries are readily available during summer but choose the combination of the freshest and most flavorful berries you can find.  Feel free to experiment with your favorite berry combination—the more, the merrier! 

For the creamy and dreamy cheesecake filling, make sure to have cream cheese, powdered sugar, a splash of vanilla extract, and some heavy cream on hand. With these simple ingredients, you're well on your way to this yummy summer dessert.

For the Cheesecake Filling:

- 16 ounces (450g) cream cheese, softened

- 1 cup powdered sugar

- 1 teaspoon vanilla extract

- 1 cup heavy cream

- 1 cup mixed berries (such as strawberries, blueberries, raspberries, and blackberries), washed and patted dry, coarsely chopped

You'll want to top your cheesecake with a fruit topping and more fresh berries.  

For the Berry Topping:

- 1 cup of mixed berries, for the sauce, plus one cup of mixed berries for decoration

- 2 tablespoons granulated sugar

- 1 tablespoon lemon juice

How to Make No-Bake Berry Cheesecake

In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand and all the crumbs are coated with butter.

Press the crumb mixture firmly into the bottom of a 9-inch springform pan or a pie dish. Use the back of a spoon or the bottom of a measuring cup to create an even and compact crust. Place the pan in the refrigerator while preparing the filling.  If you prefer to bake the crust, like I do, place it in a preheated 325 degrees F oven for 5-8 minutes, until lightly golden.  Cool completely.

Grab a couple of mixing bowls to make the filling.  In one bowl, beat the softened cream cheese until it's velvety smooth. Add in the powdered sugar and a dash of vanilla extract, then continue to whisk until it's beautifully combined. In another bowl, whip the heavy cream until you have luscious, billowy peaks.

Gently fold the whipped cream into the cream cheese mixture. You don't want to deflate those fluffy clouds of goodness! Next, it's time to welcome the stars of our show—the mixed berries! Fold them into the creamy filling, and watch the vibrant colors swirl together like a summer sunset.

Now comes the hard part—waiting! Spoon the yummy cream cheese and berry concoction over the cooled graham cracker crust.  Top with the berry sauce and the extra berries for decoration. Then pop it into the refrigerator.

Instructions

  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and continue to beat until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until smooth and fully incorporated.
  6. Reserve one cup of mixed berries for the topping and roughly chop the other cup of berries. Fold the chopped berries into the cream cheese mixture, distributing them evenly.
  7. Pour the cream cheese filling over the prepared graham cracker crust in the pan, spreading it out into an even layer.
  8. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow it to set.
  9. For the berry topping, take the remaining 1 cup of mixed berries and place them in a small saucepan. Add the granulated sugar and lemon juice. Cook over medium heat, stirring occasionally, until the berries soften and release their juices. This will create a simple berry sauce.
  10. Let the berry sauce cool to room temperature before pouring it over the chilled cheesecake.
  11. If desired, garnish the top of the cheesecake with additional fresh berries.
  12. Remove the sides of the springform pan before serving.
