Don't overbake. You don't want the eggs and cheese to get tough and rubbery.

Crustless Taco Pie

Instructions
- Grease an 8-inch square glass or ceramic baking dish. Preheat your oven to 350 degrees F.
- Brown the ground beef in a large skillet over medium-high heat.
- Add the onion and jalapeno pepper. Cook until softened.
- Add the garlic and seasoning mix. Cook for one minute.
- Stir in the chopped tomato. If you have a lot of grease in your pan, drain the grease.
- In a bowl or large measuring cup, mix together the eggs and heavy cream, breaking up the eggs. Add 1/4 teaspoon each of salt and pepper.
- Spread half of the beef mixture in your prepared pan. Sprinkle half the cheese over the beef mixture. Repeat.
- Pour the egg mixture over the beef mixture.
- Bake for 30 minutes until the top starts to brown.
- Cool for 10-15 minutes before serving so the taco pie will hold together. Serve with a green salad.
Notes
Choose to use either your favorite taco seasoning or my southwest seasoning blend. The recipe for the southwest seasoning blend is found here.
You can serve this with tortillas. Just slice your portions thinly and place them on top of a tortilla.
