Favorite Tomato Salad
August is a month we look forward to in the Just One Donna household.  That's because local tomatoes begin to reach their peak and tomato salads can be made.  This year looks to be a banner year for tomato salads because the three tomato plants I have in my little garden a full of lovely fruit.  We picked our first batch of tomatoes today, and the first requested use for them was Tomato Salad.

Our favorite Tomato Salad is based on the traditional flavors of a Caprese Salad.  We use chunks of fresh tomatoes, sliced red onion, chunks of fresh mozzarella cheese and plenty of fresh chopped basil.  These simple ingredients are tossed in a vinaigrette of olive oil, red wine vinegar, salt and pepper.  So easy and so good.  You can make it an hour before you serve it, but making it the day before is even better.

Just One Donna's Favorite Tomato Salad

The Tomato Salad Ingredients
  • 6 ripe red tomatoes, cut into chunks
  • 1 small red onion, sliced thinly
  • 4-6 fresh basil leaves, cut in ribbons
  • 4 ounces fresh mozzarella, cut into chunks
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Cut your tomatoes into chunks and slice the onion.  I like my onion slices very thin.  

Slice the Tomatoes and Onions

Place the tomatoes and onions in a bowl.  Stack the basil leaves together, roll them into a cigar shape and slice them into ribbons. 

Slice the Basil into Ribbons

Add to the bowl of tomatoes.  Cut the mozzarella cheese into chunks and add to the bowl.

Toss the Ingredients Together

Mix the extra virgin olive oil, red wine vinegar, salt and pepper together in a small bowl.  Pour over the tomato mixture and toss with two spoons.  Cover and refrigerate for at least two hours and up to 24 hours.  Stir before serving to distribute the flavors.
