my part of the country has a lot to do with my salad-making. Hot, humid weather makes the
prospect of cooking using the oven or stove unpleasant. This cucumber salad
makes a cool side dish for a hot summer day.
You might even consider making this cucumber salad instead of potato salad for
your next picnic or barbecue. It's that good.
Crunchy Cucumber Salad
I planted two cucumber plants in early spring and they are producing with a vengeance now. I'm not a huge fan of cucumbers but with so many coming from my garden I needed to think of a delicious way to use them. This salad was my solution.
Tips for the Best Cucumber Salad
You don't want seeds in your salad. Choose a seedless cucmber or
remove the seeds. Removing seed is easy as can be so don't sweat over it.
Cucumbers can be watery. If a watery dressing concerns you, place your
lightly salted, sliced cucumbers in a colander and allow them to drain for
about an hour. Pat them dry. I don't bother with this step because I
find the dressing coats the cucmbers well enough. I serve with a slotted
spoon.
Use colorful ingredients. Use a red onion and some chopped fresh herbs
for additional color. Parsley, dill or chives are good choices.
Taste as you go. Adjust the flavors of the dressing to suit your
taste. Make this salad your own.
This salad is best consumed the day you make it. Your cucumbers may be
less crisp and the salad will get more watery the longer is sits in your
refrigerator.
