Mango-Orange-Passion Balsamic Vinegar Cedar Plank Salmon

Last weekend I was introduced to a a unique and interesting shop that specializes in the sale of specialty olive oils and vinegars called O'Live A Little.   Located in the Promenade Shops at Evergreen Walk in South Windsor, CT, the shop is a fun place to visit.  All of the oils and vinegars are on tap.  You are encouraged to taste before your selection is bottled for you to take home.

My sister-in-law and I made a special trip to the store to purchase the Mango Orange Passion Balsamic Vinegar that we needed for the Cedar Planked salmon that was planned for dinner.This is an easy recipe that gets its flavor from this delicious specialty balsamic vinegar.  The original recipe, which my sister-in-law altered slightly is available on O'Live A Little's website.  The staff in the store is also chock full of wonderful suggestions for using the oils and vinegars.

The Marinade Ingredients
Mango Orange Passion Balsamic Vinegar Cedar Plank Salmon
Serves 4
  • 1 whole side of salmon, or 4 (6-ounce) salmon fillets, skinned (Ask your fish monger to skin the salmon for you)
  • 1/2 Tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1Tablespoon Dijon mustard
  • 1 Tablespoon light brown sugar
  • 1/4 cup O’Live A Little Mango-Orange-Passion Balsamic Vinegar
  • 1 - 2 untreated cedar planks, each about 5 by 12-inches, soaked in water to cover for at least 2 hours
  • Extra-Virgin Olive Oil, for oiling the planks

Directions
Prepare the planks by soaking them in water.  Prepare the marinade.  In a small bowl mix together the balsamic vinegar, salt, pepper, brown sugar and Dijon mustard.  About two hours before cooking, place the salmon skin side down in a large baking dish,  Brush the top of the salmon with the marinade.  Cover and refrigerate.

Preheat your grill.  Remove the planks from the water and dry.  Brush the planks with extra virgin olive oil.  Place the planks on the grill to preheat for 5 minutes.  Place the salmon on the planks and brush with the marinade.  Cook the salmon until desired doneness, for 10-20 minutes.  The thickness of your salmon will determine the appropriate cooking time.

You may want to keep a squirt bottle of water handy for any flare ups on the grill.  Remove the salmon to a serving platter.

Unfortunately, O'Live A Little does not have an online store.  In the meantime, you may be able to find flavored balsamic vinegars near where you live.  I'm going to be trying flavored balsamic vinegars in lots of recipes in the future and encourage you to do the same.  It's quick, easy and packed with flavor.
