Using a Bread Machine to Make Bread: Your Secret Weapon!

For those of you who love the set-it-and-forget-it approach, your bread machine is truly a kitchen superhero! Making the dough in a bread machine simplifies the bread-making process immensely. Here are my tips for how to use it for this homemade cinnamon swirl bread:

1.  Ingredient Order Matters: For optimal mixing, add the ingredients in a specific order. Typically, this means liquids first, followed by soft butter, then dry ingredients like bread flour (yes, for the best texture, bread flour is recommended!), and finally, the bread machine yeast. Add your salt and cinnamon with the liquid ingredients because they tend to inhibit yeast growth. Check your bread machine's manual for its recommended order, as it can sometimes vary.


2.  Select the Dough Cycle: Once all the ingredients are in, simply select the "dough" cycle on your bread machine. This cycle will handle the mixing and kneading for you, creating a smooth and elastic dough that's ready for the next step.

3.  Check the Dough: You'll want to check your dough after 5-10 minutes of mixing for consistency.  If it is too wet, add a little flour.  Too dry, add a little water.

4.  Ready to Shape: Once the dough cycle is complete, your cinnamon swirl bread journey truly begins with shaping and creating that beautiful swirl!

Why Cinnamon Swirl Can Be Challenging (and how we overcome it!)

While the bread machine makes the dough-making process a breeze, achieving that perfect cinnamon swirl can sometimes present a few challenges:

Uneven Swirl: Sometimes the cinnamon filling can get lost or create large, empty pockets within the bread. The method of flattening the dough, brushing with egg wash (which helps the filling adhere), and evenly sprinkling the sugar, flour, and cinnamon mixture will help prevent this.

Filling Leaking Out: If the dough isn't rolled tightly enough, the filling can sometimes ooze out during baking. Roll the dough firmly into a log to keep that delicious filling tucked inside.  I show you my technique in my YouTube video.

Dry Swirl: A dry or clumpy filling won't spread evenly. The small amount of all-purpose flour in the filling helps to absorb any moisture and create a more cohesive mixture that distributes beautifully.

How to Make Cinnamon Swirl Bread in Your Bread Machine

You Will Need:

For the Bread Dough 

  • 1 cup lukewarm water
  • Flour, butter, sugar, cinnamon, yeast, water on a counter.
    2 Tablespoons soft, unsalted butter
  • 3 cups bread flour (360 grams)
  • 2 Tablespoons brown sugar
  • 1 ½ tsp. salt
  • 1 tsp. cinnamon
  • 2 tsp. bread machine yeast

For the Filling:

  • ¼ cup granulated sugar
  • 2 tsp all-purpose flour
  •  2 tsp cinnamon
  • 1 egg mixed with 1 Tablespoon of water (for egg wash)

2 Tablespoons melted butter (for brushing after baking, optional)

The Steps:

1.  Add Bread Dough Ingredients: Add the bread dough ingredients to your bread machine pan in the order listed above (or according to your bread machine manufacturer's instructions – usually liquids first, then solids, with yeast last).  For best results, weigh your flour, 360 grams.

2.  Select Dough Cycle: Select the "dough" cycle on your bread machine. This cycle will mix and knead the dough, and then allow it to rise.

3.  Complete Dough Cycle: Once the dough cycle is finished, carefully remove the dough from the bread machine and place it on a lightly oiled surface.

4.  Shape the Dough: Gently flatten the dough into a rectangle approximately 6x12 inches.  A lightly greased surface helps.

5.  Prepare for Swirl: Brush the entire surface of the dough with the egg wash mixture.

6.  Make the Filling: In a small bowl, mix together the granulated sugar, all-purpose flour, and cinnamon for the filling until well combined.

7.  Sprinkle the Filling: Evenly sprinkle the cinnamon-sugar mixture over the egg-washed surface of the dough.

8. Roll the Dough: Starting with one of the short ends, tightly roll the dough into a log. Pinch the seam to seal it closed. Gently tuck the ends under.

9.  Prepare the Loaf Pan: Grease an 8 x 4 ¼ inch loaf pan.

10. Place Dough in Pan: Carefully transfer the rolled dough log into the prepared loaf pan.

11. Second Rise: Cover the pan loosely with lightly greased plastic wrap. Set aside in a warm place to rise until the dough is approximately 1 inch above the rim of the pan (this usually takes about 30-60 minutes, depending on the temperature of your environment).

12. Preheat Oven: About 15 minutes before the end of the rising time, preheat your oven to 350 degrees F (175 degrees C).

13. Bake the Bread: Place the risen loaf pan in the preheated oven and bake for 30 minutes, or until the internal temperature registers 190 degrees F (use a digital thermometer for accuracy).

14. Brush with Butter (Optional): Immediately after removing the bread from the oven, brush the top crust with melted butter for extra shine and softness (optional).

15. Cool: Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely. This prevents the bottom from becoming soggy.
