You Will Need

  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1/2 large onion, chopped

  • 2 cups fresh spinach, chopped
  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter or oil (for greasing the baking dish)

The Steps

1. Preheat the Oven: Set your oven to 350°F (180°C). Grease a 9x9-inch baking dish with butter or oil. 

2. Brown the Sausage: Cook the crumbled sausage in a large frying pan over medium heat.  Add the chopped onion and Italian seasoning as the sausage cooks. Set aside. 

3. Prepare the Spinach: Remove any stems from the spinach and coarsely chop.

4. Whisk the Eggs: In a large bowl, whisk together the eggs, ricotta cheese, cream, salt, and pepper, until well combined.  Add the Parmesan cheese and spinach.

5. Layer the Ingredients: Spread the cooked sausage evenly across the bottom of the greased baking dish.  

6. Pour the Egg Mixture: Slowly pour the egg mixture over all the ingredients in the dish. Gently shake the dish to distribute the eggs evenly.  

7. Top with Cheese: Sprinkle the shredded cheddar cheese on top.  

8. Bake: Place the dish in the oven and bake for 25-30 minutes, or until the eggs are set in the center and the top is golden brown.  

9. Cool and Serve: Let the egg bake cool for about 5 minutes before slicing. Serve warm and enjoy!
