How do you prepare the mushroom stems? First, brush the stems off to make sure they are clean. Then pop them from the mushroom cap. They will pop off easily. Chop them and you are ready to use them.

Easy Three Cheese Stuffed Mushrooms

Instructions
- Preheat oven to 350 degrees F.
- Clean the mushrooms. Remove and finely chop the stems.
- Melt the butter and olive oil together in a skillet over medium heat. Add the mushroom stems, onion, jalapeno pepper, and Italian seasoning to the pan. Cook until tender. Add the grated garlic. Season with salt and pepper and set aside to cool for about 10 minutes
- Shred the cheddar cheese. Mix the Parmesan with the cheddar cheese. Reserve about 1/3 of the cheese mixture to top the mushrooms.
- Combine the remaining cheese mixture with cream cheese making sure to combine well. Add the stems mixture, stirring to combine well.
- Place the mushroom caps on a sheet pan. Fill each of the caps with the stems-cream cheese mixture. Top with the reserved cheddar Parmesan cheese mix.
- Bake for 15-20 minutes until the cheese is melted and the mushroom caps are tender. Cool for 10-15 minutes before serving.
