The recipe is flexible.  You can make as many mushrooms as you need.

These mushrooms will appeal to many with dietary restrictions.  This is a meatless appetizer that is low-carb and keto. Each stuffed mushroom is relatively low in calories, too.

They are packed with cheesy goodness and lots of flavor. Each bite delivers on tasty goodness.

You can make them ahead of time.  You can prepare the mushrooms a day ahead and refrigerate them until you need to bake them.

Your Stuffed Mushroom Questions Answered

What kind of mushrooms make the best stuffed mushrooms?  I prefer white button mushrooms or Crimini mushrooms.

How do you prepare the mushroom stems?  First, brush the stems off to make sure they are clean.  Then pop them from the mushroom cap.  They will pop off easily.  Chop them and you are ready to use them.

Can you use a cheese other than cheddar?  Yes, you do you, but choose a nice, melty cheese.  

Can you leave out the garlic?  Yes, but the mushrooms won't be as flavorful.

Will these mushrooms be soggy?  Don't wash your mushrooms.  Just brush them clean with a dry towel.  Cook the vegetable filling mixture until the moisture has cooked off.  Spread the mushrooms out on your sheet pan.  Crowding the mushrooms in a pan will encourage sogginess.

How many stuffed mushrooms should I serve per person?  Plan for three to four stuffed mushrooms per person.

What can you do with leftover stuffed mushrooms?  Chop them up and use them as the filling in an omelet.

Easy Three Cheese Stuffed Mushrooms

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. Clean the mushrooms. Remove and finely chop the stems.
  3. Melt the butter and olive oil together in a skillet over medium heat. Add the mushroom stems, onion, jalapeno pepper, and Italian seasoning to the pan. Cook until tender. Add the grated garlic. Season with salt and pepper and set aside to cool for about 10 minutes
  4. Shred the cheddar cheese. Mix the Parmesan with the cheddar cheese. Reserve about 1/3 of the cheese mixture to top the mushrooms.
  5. Combine the remaining cheese mixture with cream cheese making sure to combine well. Add the stems mixture, stirring to combine well.
  6. Place the mushroom caps on a sheet pan. Fill each of the caps with the stems-cream cheese mixture. Top with the reserved cheddar Parmesan cheese mix.
  7. Bake for 15-20 minutes until the cheese is melted and the mushroom caps are tender. Cool for 10-15 minutes before serving.
