This cookie highlights oatmeal, coconut, and chocolate chips. Choose the chocolate chips you like best. Milk chocolate, semi-sweet

I chose to use unsweetened coconut flakes in this cookie but you can use
sweetened coconut if you want additional sweetness. The coconut adds a
yummy chewiness to the cookie.
