Chocolate Chip Coconut Oatmeal Cookies

This combination of chocolate chips, coconut, and oatmeal makes a cookie that will make you say yum.

When you're not sure whether you want a chocolate chip cookie or an oatmeal cookie, why not combine the two?

Add some coconut and voila! Chewy deliciousness!

This is a simple drop cookie that you can easily customize.  Choose the chocolate chips you like best.  Milk chocolate, semi-sweet chocolate, dark chocolate, or white chocolate chips will each add a burst of flavor.

I choose to use unsweetened coconut flakes in this cookie but you can use sweetened coconut if you want additional sweetness.  The coconut adds a yummy chewiness to the cookie.

The bake time for the cookie will vary with the size of your cookies and your oven.  I like to use a scoop for uniform cookies that are about three inches in size.  Start by checking your cookies at ten minutes of baking time.  Mine take fourteen minutes in my oven.

This combination of chocolate chips, coconut, and oatmeal makes a cookie that will make you say yum.
Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 cup unsweetened coconut flakes
  • 1 cup chocolate chips

Directions
Preheat your oven to 375 degrees F.  

In a large bowl, cream together the butter and sugars.  Beat in the eggs, one at a time.  Add the vanilla and stir to combine.

In a separate bowl, combine the flour, baking soda, baking powder, and salt.  Stir to combine.  Add the flour mixture to the butter mixture.  Mix well.

Stir in the oatmeal.  Mix well.

Stir in the coconut and the chocolate chips.

Scoop the batter onto a lightly greased cookie sheet, or line your cookie sheet with parchment paper.

Bake the cookies until set and lightly browned at the edges.  Start checking them at 10 minutes.
