It’s also October and October also means Halloween. You should know that Halloween is my least favorite holiday of the year. When I say the least favorite, I really mean I dislike it. I don't like the focus on all things macabre. I don't like scary costumes and masks. I dislike being subjected to horror movie trailers every time I flip on the television.
Truth be told, I'm not keen on trick-or-treating either. We do it at my house and I make sure to have full-size candy bars to give out to our neighborhood ghosts and goblins, but I admit I lack enthusiasm for the evening. What I do like about Halloween is the colorful decorations. That includes decorations on cupcakes and cookies.
That's why I decided to combine my love of pumpkin and decorating cupcakes into pumpkin cupcakes for October. Don't you think they would make a fun Halloween dessert?

To Prepare the Cupcakes
- Preheat the oven to 350 degrees F. Line 12 serving muffin pan with paper liners.
- Mix the flour, baking soda, and spices together in a bowl to combine. Set aside.
- Beat the butter and sugar together in the bowl of your mixer until light and fluffy.
- Add the eggs, one at a time, beating after each addition. Add the vanilla.
- With the mixer on slow speed add the flour mixture and pumpkin in three additions, beginning and ending with the flour mixture.
- Fill the muffin cups, dividing the batter evenly. I used an ice cream scoop and that worked perfectly.
- Bake the cupcakes for 18-20 minutes, until firm to the touch and a toothpick comes out clean.
To Prepare the Frosting
- Beat the cream cheese and butter together.
- Add the vanilla and the sugar. Mix until combined and smooth.
- Spoon a generous amount onto each cupcake. Swirl with the back of the spoon.
- Add assorted holiday decorations.
