Cran-Apple Muffins

When the calendar flips from October to November I start to give up my obsession with pumpkin.  Oh, no, I don't give up pumpkin altogether, but I do start to make room for another fall favorite-cranberries. The tart flavor of cranberries adds an element of surprise to baked good, often balancing the sweet with an enticing tang. 

My first cranberry recipe for November is a delicious cranberry-apple muffin.  The combination of sweet and tart is a perfect way to wake up your senses in the morning.  Pair it with your favorite mug of coffee or tea and you'll feel like you are indulging yourself, but at 252 calories it is a sensible start to your day.

These muffins freeze nicely.  Wrap them individually and pop them into a freezer bag.  They are perfect to grab on your way out the door in morning.  No need to stop at the local coffee shop for one of their calorie laden muffins.  Are you planning a Thanksgiving breakfast?  A basket of these tasty muffins would be a nice addition to your breakfast table. 

Cran-Apple Muffins
Makes 10
Cran-apple Muffin Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup light brown sugar, packed
  • 1/4 cup vegetable oil
  • 1/4 cup light sour cream
  • 1 teaspoon vanilla
  • 1/2 medium unpeeled apple, diced
  • 3/4 cup fresh cranberries
  • 1/2 cup chopped walnuts

Directions
Preheat the oven to 350 degrees F.  Grease your muffin pan.  Whisk the flour, baking soda, cinnamon and salt together in a medium bowl.  In a separate bowl mix together the eggs, brown sugar, oil, sour cream and vanilla until combined.

Prepare the Fruit and Nuts


Add the wet ingredients to the dry and mix until just combined.  Fold in the apples, cranberries and walnuts all at once.   Don't over mix.

Don't Over Mix
Scoop the batter evenly into the muffin tins.  Sprinkle sugar on the top of each muffin for a little extra crunch.  I used turbinado sugar. 

Ready for the Oven

Bake for 20 minutes.  Cool for 10 minutes in the pan and then remove to a wire rack to cool completely.
