Pesto Shrimp Alfredo

Is your garden abundant with basil?  Make pesto, baby!  Don't worry if you aren't growing basil.  You can buy pesto premade at your local grocery store. 

I'm certain you'll want to stock your pantry with pesto after trying this shrimp and pasta recipe.  Oh, so good!  This recipe comes to us from my mom who got it from my sister-in-law.




High Calorie Warning:  Now, you know I like to eat light as often as I can.  This recipe is not a light recipe, so beware.  There is absolutely nothing light about this recipe.  You'll want to save up your allotment of fat and calories to enjoy this dish.

Pesto Shrimp Alfredo Ingredients
Pesto Shrimp Alfredo
Serves 4 generously

  • 1 pound pasta of choice, linguine or angel hair is perfect
  • 1 stick unsalted butter
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup pesto
  • 1/2 teaspoon pepper
  • salt to taste
  • 1 pound shrimp

In a large pot, start the water for the pasta.  Cook pasta to time readiness along with sauce.  In a large skillet melt the butter and stir in the cream.  Cook for 6 to 8 minutes stirring constantly. 

Start the Sauce with Butter and Heavy Cream

Stir in the Parmesan cheese.  Add the pesto and cook 3 to 5 more minutes.  Taste and add salt and pepper as needed. 

Stir in the Pesto

Add the shrimp to the bubbling sauce.  Cover the pan and cook for 3 to 5 minutes until shrimp is pink.  Drain the pasta and add to the pan.  Toss the sauce and pasta together.  Serve immediately.
