Low Carb Shrimp Pesto Alfredo

Shrimp Pesto Alfredo is a decadent, low-carb, dinner option perfect for when you are wanting a special dinner.

You don't have to be following a low-carb eating plan to love this dish.

Shrimp Pesto Alfredo is low carb as long as you swap out the pasta for a low carb option.  Your favorite spiralized vegetables will make a smart choice.

For those of you who love traditional Alfredo dishes, serve the Shrimp Pesto Alfredo over your favorite pasta.


Just take a look at the nutritional components of Shrimp Pesto Alfredo. There are 3.3 carbs per serving, excluding the pasta.




Another reason to make this shrimp dish for dinner is that it is quick to prepare.  Special dinners don't have to be time-consuming to prepare. You'll have dinner on the table in thirty minutes or less.  You can't beat that!

Low Carb Shrimp Pesto Alfredo
You can make your own fresh basil pesto or use your favorite prepared pesto.  I usually use my own prepared pesto that I keep frozen in cubes in my freezer.  For this dish, I can just pop the frozen cubes right into the sauce to gently melt into the sauce.  It's so easy and delicious.

When using spiralized vegetables for this dish, just add the veggies to the sauce with the shrimp and let them cook together.  If you choose to serve your Shrimp Pesto Alfredo over pasta, time the cooking of your pasta so that it will be ready when the shrimp is cooked in the Alfredo sauce.

Low Carb Shrimp Pesto Alfredo

Serves 6
Shrimp Pesto Alfredo Ingredients

  • spiralized veggies of choice for low carb option, OR
  • 1 pound pasta of choice, linguine, or angel hair is perfect
  • 1 stick unsalted butter
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup basil pesto
  • 1/2 teaspoon pepper
  • salt to taste
  • 1 pound shrimp, shelled and deveined

Directions

In a large pot, start the water for the pasta.  Cook your pasta to time its readiness along with the Alfredo sauce.  In a large skillet melt the butter over medium heat and stir in the cream.  Bring to a boil and reduce to simmer. Cook for 6 to 8 minutes, stirring constantly.

When using spiralized vegetables for this dish, just add the veggies to the sauce with the shrimp and let them cook together.

Start the Sauce with Butter and Heavy Cream

Stir in the Parmesan cheese.  Add the pesto and cook 3 to 5 more minutes.  Taste and add salt and pepper as needed.

Add the shrimp to the bubbling sauce.  Cover the pan and cook for 3 to 5 minutes until shrimp is pink.  Drain the pasta and add to the pan.  Reserve a bit of the pasta cooking water in case you need it. Toss the sauce and pasta together.  Serve immediately.

This is a deliciously decadent dish for pesto lovers whether following a low-carb diet or not.
