Making Bread Machine Focaccia

Focaccia Bread
I'm on a quest to conquer yeast.  Yes, yeast.  My attempts at baking with yeast over the past couple of years have produced inconsistent results.  Last week I made anadama bread with some success.

I'll continue to work on making yeast bread and share my results with you, but in the meantime, I'm getting some help from a bread machine.  I can make a delicious garlic and rosemary focaccia bread using my bread machine.  You can, too.  Let's do it!









Garlic and Rosemary Focaccia Bread
Focaccia Bread Ingredients
Bread Ingredients
  • 1 c water, 80°F
  • 1/3 c olive oil
  • 2 tsp sugar
  • 1 tsp Kosher salt
  • 3 cups bread flour
  • 1 1/2 tsp active dry yeast
  • 2 tsp chopped fresh rosemary
Add the ingredients, except rosemary, to the bread machine.  Set machine on dough setting.  At the first pause in the cycle add chopped rosemary.  Continue through dough cycle.

Prepare Topping
  • 1/4 c extra virgin olive oil
  • 6-8 garlic cloves, chopped fine
  • 1 Tablespoon fresh rosemary, chopped
  • 1/3 cup shredded Parmesan cheese
Directions
Heat the extra virgin olive oil  in a small pan over medium heat.  When hot add the chopped garlic.  You'll hear it sizzle.

Add the Garlic and Rosemary
Immediately remove the pan from the heat and add chopped rosemary.  Set aside.
When the dough cycle completes, press the dough into a well-oiled 9"x13"-inch pan.  Make indentations in the dough with your fingers.  Cover with plastic wrap and let rise for 30 minutes, or until nearly double in size. 

Ready to Rise

Preheat the oven to 400°F. Once again press indentations in the dough with your fingers.  Spoon olive oil topping evenly over dough.  Sprinkle with shredded Parmesan cheese. 

Focaccia Ready for the Oven
Bake for 20 minutes, or until done.  Let the baked focaccia bread sit for at least 15 minutes before cutting.

I like to cut the focaccia into squares using a pizza cutter.  I use the OXO 4" pizza wheel that works perfectly every time.

Saw your replies to Pioneer Woman and also just saved your Super Bowl recipes - being from Texas we have ample avacados so will be making your quac many times.
