Cranberry Pistachio Yeast Bread

A fabulous yeast bread you'll all year round but especially in the fall. It's delightful as toast on a cool fall morning and as a holiday breakfast toast.

Instructions

  1. Place the ingredients in the bread machine in the order indicated, reserving the raisins until indicated by your machine or between kneading sessions.
  2. Select the dough cycle.
  3. Press start.
  4. Check your dough's consistency about 5 minutes into the cycle. If it is too loose, add flour a tablespoon at a time. If it is too dry, add water a tablespoon at a time. Add the cranberries and pistachios.
  5. At the end of the dough cycle, grease a metal loaf pan. Remove the dough from the pan, form it into a loaf, and place it in the greased pan.
  6. Cover the pan loosely with plastic wrap that you have sprayed lightly with oil.
  7. Preheat the oven to 350 degrees F. Let the bread rise to about an inch above the top of the pan.
  8. Bake the bread for about 30 minutes until the crust is browned and the internal temperature is 190 degrees F.
  9. Brush the top crust with melted butter and remove the loaf to a wire rack to cool completely.
  10. Wrap in plastic wrap for storage once completely cooled.

Notes

When fully baking this bread in your bread machine, use the sweet bread cycle and follow your bread machine's directions.
