Roasted vegetables make a tasty side dish that is perfect for many occasions.  Whether you choose to roast vegetables in your oven or in a grill pan on your grill you'll love the ease and versatility. You'll especially love them when you are planning a menu for a large gathering.  

Do you need a make-ahead side dish? Roasted vegetables can even be prepared in advance because they are delicious either hot or at room temperature.

Zucchini squash and mushrooms are the main vegetables in this combination.  Their flavors are enhanced by the addition of sweet peppers and onion.

Make-ahead preparation frees up time for you whether you are preparing for a large party or a weeknight dinner. It also gives the garlic, salt, and pepper time to work their magic.

You have the option to serve these roasted vegetables hot or at room temperature.  That takes the pressure off when you have a lot of things cooking at one time.

You also have the option to roast these vegetables in the oven or on your grill.  Both result in a yummy side dish.

Tips for Success

Buy fresh, crisp vegetables.  Your ingredients are the stars in this side dish so freshness is key.

Be generous with your olive oil, salt, and pepper to get the best flavor.  I love lots of garlic, but adjust the amount based on your preference.

Don't crowd your pan.  Use a large sheet pan. It doesn't matter whether you are roasting these vegetables in the oven or on your grill, you'll want your vegetables to be spread out.  Give the vegetables space for the best result. Getting a little brown on your vegetables adds to the overall flavor.

Roasted Vegetables for Oven or Grill

Roast zucchini, mushrooms, peppers, and onions together in the oven or on the grill for a versatile side dish.

Ingredients

Instructions

  1. Preheat your oven, or grill to 425 degrees F. Clean the mushrooms and cut them in half. Cut the zucchini into chunks about the same size as the mushrooms.
  2. Cut the pepper into long slices and then in half. Slice the onion.
  3. Spread the vegetables onto a sheet pan if cooking in the oven, or into a bowl if grilling.
  4. Mince the garlic, or use a garlic press. Add the garlic to the vegetables.
  5. Sprinkle the vegetables with olive oil, salt, and pepper. Toss to be sure the vegetables are well-coated.
  6. Place the sheet pan in the preheated oven on the center rack and cook for approximately 30 minutes, until the vegetables are tender. For the grill, spread the vegetables on a grill pan and cook until tender.
