Skinny Summer Colada Cocktails

My Skinny Coconut Colada
A few days ago my Facebook news feed brought me inspiration for today's two Colada Cocktails via the Ocean House, a local hotel. 
 
Their inspiration cocktail is called the Ocean House Colada and is made with coconut water and coconut flavored vodka.   It was the coconut water that intrigued me. 
 
I had never heard much about coconut water.  I've used coconut milk and coconut cream before, but never coconut water.

 

 

 A little research revealed the following information about coconut water:
  • Coconut water comes from an unripened coconut.  The water is absorbed into the flesh of the coconut as it ripens.
  • Coconut water is not the same as coconut milk.  It has much fewer calories, approximately 45 calories per 8 ounces.
  • Coconut water is rich in electrolytes making it a good sports drink.
  • Coconut water is rich in minerals, contains no fat and while sweet in taste, contains no sugar.
  • It is said to promote a long list of health benefits and promote a healthy, wrinkle free complexion.

Wow, I thought, where can I get some of this wonder drink?  Off I went to my local health food store thinking that would be the logical first stop.  Surprise!  No coconut water at the health food store.  I was directed to a local market where I found a couple of brands, one mixed with other flavors like pineapple and pomegranate.  I purchased one container of plain coconut water and one flavored with pineapple.

 
I am a fan of pina coladas.  I love the tropical flavors of coconut and pineapple, but let's face it, the calories make the pina colada a poor cocktail choice.  Could I make a skinny version of the pina colada using coconut water?  I made two versions I'd like to share with you.  I think you will find them to be a satisfactory substitution for the traditional pina colada.  One sip will make you think you are in the tropics.

 
The Skinny Coconut Colada
Makes one drink
Skinny Coconut Colada Ingredients
  • 3 ounces coconut-pineapple water (17 calories)
  • 1 1/2 ounces coconut rum (90 calories)
  • a mint sprig or fruit for garnish

 
Directions
Fill your cocktail shaker with ice.  Add the coconut water and coconut flavored rum.

 
Cover the shaker and shake for about 20 seconds or until the cocktail shaker is frosty.  Strain the drink into your coctail glass, garnish and serve.

The Skinny Pineapple Colada
Makes one drink

 
  • 3 ounces coconut-pineapple water (17 calories)
  • 1/1/2 ounces pineapple rum (104 calories)
  • a mint sprig or fruit for garnish

 

 

Directions
Fill your cocktail shaker with ice. Add the coconut water and pineapple flavored rum.

 
Cover the shaker and shake for about 20 seconds or until the cocktail shaker is frosty. Strain the drink into your coctail glass, garnish and serve.
