How to Make a Quick and Tasty Confetti Rice Side Dish

This confetti rice is one of my favorite made from scratch rice recipes for a quick weeknight side dish.

Occasionally, we like to have rice as a side dish at my house.  Plain rice is not our thing, so I'm always mixing something into it.  Confetti is a tasty option.

When I was making this rice the other night, I looked at the ingredients on the cutting board and thought the name, Confetti Rice, would describe it perfectly.  Genius, I thought!  Confetti rice is a perfect name for this dish.  

So, when I sat down to write this post to share the recipe with all of you, I decided to Google "confetti rice".  Google gave me 628,000 results!  I guess now we'll have 629,000 confetti rice recipes and I am once again reminded that I'm not as unique as I might think!  Hah!

Don't let that stop you from making this confetti rice a regular on your side dish rotation.  This is a colorful and flavorful way to add a little healthiness to your rice.

Serves four to six as a side dish


  • 1 Tablespoon olive oil
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped yellow or orange bell pepper
  • 1-3/4 cups chicken stock
  • 1 cup long grain rice


Directions
Heat the olive oil in a medium saucepan over medium-high heat.  Add the onion and bell peppers to the pan and cook until tender, about five minutes.

Add the chicken stock to the pan, cover the pan and bring the mixture to a boil.  Add the rice and reduce to a simmer.  Cook for 20 minutes.  Stir the rice.  Turn off the heat and let the rice sit for five to ten minutes.  Serve with your favorite main dish.

Make Confetti Rice instead of a boxed rice mix.  It is a flavorful side dish and you control the ingredients.

  1. I make a dish like this often. If I use homemade chicken stock, I usually have to add a bit of salt and pepper to the rice (store-bought stock has enough salt for me).

    1. This is a great alternative to buying packaged rice dishes because we can control the amount of salt. Homemade chicken stock is the best, but I don't always have it on hand.
