Meatloaf is definitely on my list of comfort foods and turkey meatloaf is no exception.

#1 The meatloaf must be easy to make.  This recipe is very easy to assemble.

#3 The meatloaf must be good in a sandwich the next day. Yes, this recipe makes a yummy sandwich.

Check, check,  and check.  Today's recipe fulfills those meatloaf requirements! The keys to this meatloaf recipe's yumminess are the addition of chopped onion and chopped red, yellow, or orange pepper, which helps to keep the meatloaf moist as well as add flavor.   

Using seasoned stuffing mix instead of plain breadcrumbs adds more flavor. There are other flavor enhancers, too, but the onion, pepper, and stuffing mix take the meatloaf over the top for flavor. 

Can you make this turkey meatloaf in advance?

Absolutely. Making the meatloaf ahead of time allows the flavors to meld.  You can assemble the meatloaf a day ahead and refrigerate it until cooking.

Can turkey meatloaf be frozen?

Yes.  You can assemble the ingredients and freeze your uncooked meatloaf for about a month. Wrap your pan in plastic wrap and then in aluminum foil. Then slide the whole pan into a plastic freezer bag.
Thaw in your refrigerator before cooking.

You can also freeze cooked turkey meatloaf.  Cool the meatloaf completely.  Slice it into serving portions.  Wrap the portions individually in plastic wrap and place them in a freezer bag for up to a month.

What do you serve with turkey meatloaf?

Mashed potatoes are always good with meatloaf but here are some other suggestions:
Brussels sprouts are delicious and can cook in the oven along with the meatloaf.
Twice-baked potatoes are a tasty addition to a meatloaf dinner.  
These asiago potatoes are delicious, too.
This zucchini casserole would also be a nice complement to the turkey meatloaf.

Turkey Meatloaf

A turkey meatloaf packed with flavor, easy to make and delicious in sandwiches the next day.

Ingredients

Instructions

  1. Heat the oil in a medium pan over medium heat. Saute the onion and red pepper together until soft. Add the minced garlic and cook for one minute. Set the mixture aside to cool.
  2. Heat your oven to 350 degrees F. Place the ground turkey in a medium bowl. Add the cooled onion and pepper mixture and all the other ingredients to the bowl.
  3. Using your clean hands, squeeze the ingredients together through your fingers until combined. Don't overdo it, or the meatloaf will be too dense.
  4. Place the mixture in a loaf pan. You can spread additional ketchup on top, if you prefer.
  5. Cook for approximately one hour, until the top of the meatloaf is nicely browned. I like to cook my meatloaf until the internal temperature is 175-180 degrees F.
  6. Let the meatloaf rest for about ten minutes before slicing.
