Tips for Blueberry Pie Success
Clearjel is my secret ingredient. I've started using Clearjel in my
blueberry pie filling to remove the guesswork. The resulting clear and
glossy filling holds together without being too thick.
Clearjel is a modified cornstarch powder used frequently by commercial bakers. It is very easy to work with. I buy my Clearjel from Amazon.
Frozen berries take a little longer to bake than fresh berries. You'll need to bake a blueberry pie made with frozen berries for fifteen to twenty minutes longer than one made with fresh blueberries.

You want the filling to bubble, like in the picture above. Then you'll
know your pie is ready.
Use either a standard top crust or a lattice crust. A lattice crust is very pretty on blueberry pies. It allows plenty of space for the steam to escape as the filling cooks and it looks pretty. You can also embellish the crust with little pie crust decorations.

Pie crust cutters make pie decorations easy. You can buy pie crust
cutters from several places. This set of
star pie crust cutters is perfect for our summer patriotic holidays. This set by Chicago Metallic would be fun, too.
Don't skip the butter and lemon. Both add a little something extra to make your pie extra delicious.
When using a solid top crust, cut slits to let steam escape while baking.
An egg wash will help your pie crust brown. Sprinkle with a little sparkling sugar for sparkle and crunch.
Place your pie on a sheet pan for baking. The sheet pan with catch any juices that overflow and help keep your oven clean.
