Tips for Recipe Success

Weigh your chicken breasts.  You want your chicken cutlets to be between five and seven ounces each. A digital kitchen scale makes it easy to weigh each piece of chicken. You will get even cooking when your pieces of chicken are consistent in size.

Pound each cutlet so it is even in thickness throughout.  You want each chicken piece to be about 1/4 inch thick. Place your chicken pieces between two pieces of plastic wrap for easy cleanup.

Season your egg mixture.  That seasoning will add flavor to chicken breast and to your cooked dish.

Press the grated Parmesan cheese onto both sides of the chicken cutlet.  You want the chicken to be completely covered with cheese.

Brown the chicken pieces slowly over medium to medium-low heat.  Brown them gently so the cheese coating doesn't burn or fall off the chicken breast.

A healthy version of Chicken Parmesan that replaces bread crumbs with Parmesan cheese. Approximately 5 net carbs per serving.

  1. Pound your chicken cutlets to even them out.
  2. Mix the egg with the Italian seasoning, 1 teaspoon of water, and a little salt and pepper. Place the chicken cutlets in the egg mixture for a few minutes.
  3. Place the grated cheese on a plate. Press a layer of the cheese onto both sides of each cutlet.
  4. Heat the oil in a non-stick pan over medium heat. Place the cutlets in the pan and brown each side. Watch the temperature of the pan to ensure the cutlets cook gently.
  5. Preheat your oven to 350 degrees F. Spread about 1/4 cup of marinara sauce on the bottom of a baking dish.
  6. Place the cutlets in the prepared baking dish. Top each with more marinara sauce and mozzarella cheese. Bake in the oven for approximately 20 minutes, until the cheese has melted, the sauce is bubbly, and the internal temperature of the chicken is between 165 and 175 degrees F.
