I love pumpkin, and fall signals it's time to add plenty of pumpkin flavor to my menu.

It’s also October and October also means Halloween.  You should know that Halloween is my least favorite holiday of the year.  When I say the least favorite, I really mean I dislike it.  I don't like the focus on all things macabre.  I don't like scary costumes and masks.  I dislike being subjected to horror movie trailers every time I flip on the television.  

Truth be told, I'm not keen on trick-or-treating either.  We do it at my house and I make sure to have full-size candy bars to give out to our neighborhood ghosts and goblins, but I admit I lack enthusiasm for the evening. What I do like about Halloween is the colorful decorations.  That includes decorations on cupcakes and cookies. 

That's why I decided to combine my love of pumpkin and decorating cupcakes into pumpkin cupcakes for October.  Don't you think they would make a fun Halloween dessert?

Tips for Pumpkin Cupcakes with Cream Cheese Frosting

Use a cookie scoop to distribute the batter evenly. Your cupcakes will bake uniformly.

If you get less than twelve cupcakes from the batter fill the empty cups halfway with water for even baking.

This recipe for cream cheese frosting will make more frosting than you need.  Spoon a generous amount onto each cupcake. 

Decorations are optional but lots of fun. Start with seasonal cupcake papers. These seasonal cupcake toppers would be fun, too.

Instructions

To Prepare the Cupcakes
  1. Preheat the oven to 350 degrees F. Line 12 serving muffin pan with paper liners.
  2. Mix the flour, baking soda, and spices together in a bowl to combine. Set aside.
  3. Beat the butter and sugar together in the bowl of your mixer until light and fluffy.
  4. Add the eggs, one at a time, beating after each addition. Add the vanilla.
  5. With the mixer on slow speed add the flour mixture and pumpkin in three additions, beginning and ending with the flour mixture.
  6. Fill the muffin cups, dividing the batter evenly. I used an ice cream scoop and that worked perfectly.
  7. Bake the cupcakes for 18-20 minutes, until firm to the touch and a toothpick comes out clean.
To Prepare the Frosting
  1. Beat the cream cheese and butter together.
  2. Add the vanilla and the sugar. Mix until combined and smooth.
  3. Spoon a generous amount onto each cupcake. Swirl with the back of the spoon.
  4. Add assorted holiday decorations.
