Why You'll Love This Creamed Spinach Recipe

This recipe uses fresh spinach, aromatic garlic and onions, and a luscious cream sauce that’s perfectly seasoned. It’s a quick and easy way to elevate any meal.

  • Quick and Easy: Ready in under 20 minutes, making it perfect for busy weeknights.

  • Keto and Low Carb: With minimal carbs and plenty of healthy fats, this dish fits seamlessly into a low-carb lifestyle.

  • Fresh and Flavorful: No frozen spinach or processed sauces — just fresh, wholesome ingredients.

Ingredients You’ll Need:

  • Ingredients for creamed spinach on a counter: heavy cream, Parmesan cheese, 3 tablespoons of unsalted butter, 4 cloves of garlic, salt, and pepper.
    3 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 3-4 cloves of garlic, minced
  • 1/4 medium onion, minced
  • 16 ounces fresh baby spinach, washed and drained
  • Salt and pepper, to taste

    Step-by-Step Instructions:

    1. Prepare the Spinach: Wash and drain the spinach. Remove large stems if necessary.

    2. Wilt the Spinach: Place the spinach in a large pan over medium heat.  If your spinach is wet, you won't need to add water.  If it is dry, add 1/4 cup of water to the pan.  Cover the pan and let the spinach wilt. Stir occasionally.

    3. Dry the Spinach: Transfer the wilted spinach to a bowl lined with paper towels to absorb moisture. Set aside.

    4. Sauté the Aromatics: Melt the butter in a large skillet over medium heat. Add the minced onion and garlic. Sauté until soft and fragrant, about 3-4 minutes.

    5. Make the Cream Sauce: Reduce the heat to low. Pour in the heavy cream and stir to combine. Reduce the cream until it coats the back of a spoon. Add the Parmesan cheese, stirring until melted and smooth.  Add 1/4 tsp salt and 1/8 tsp. black pepper.

    6. Combine and Season: Return the spinach to the skillet. Toss to coat the spinach evenly with the creamy sauce. Season with salt and pepper to taste.

    7. Serve and Enjoy: Serve hot as a side dish alongside your favorite protein or as a topping for grilled chicken or steak.

    Customization Options:

    • Add a kick: Stir in a pinch of red pepper flakes for a bit of heat.

    • Make it cheesy: Increase the Parmesan or add a handful of shredded mozzarella for extra creaminess. Sprinkle extra cheese on top and heat in your oven at 350 degrees F until bubbly and golden.

    • Boost the flavor: Sprinkle in some nutmeg or a squeeze of lemon juice to brighten up the dish.

Making creamed spinach from scratch is easier than you might think, and the results are far superior to any store-bought option. With just a few simple ingredients, you can whip up a rich, creamy, and delicious side dish that’s perfect for any meal.

Customize it to suit your taste, and enjoy a restaurant-quality dish right at home!

The Keurig is sitting on a shelf in my basement, the French press is on a high shelf in the kitchen and the Cuisinart sits in my beverage center waiting for me to return to it while I take the Ninja Coffee Bar System for a test drive.   I have...
