How to Make Parmesan & Herb Crackers at Home


You Will Need:

-1-1/4 cup almond flour
-8 tablespoons of unsalted butter, at room temperature
-4 ounces grated Parmesan cheese
-1 teaspoon fresh, minced thyme or rosemary
-1/4 teaspoon kosher salt
-1/4- 1/2 teaspoon ground black pepper

The Steps:

Pulse the almond flour and the Parmesan cheese together in a food processor until well combined.  If you choose to use a mixer you will need to mix until the ingredients are creamy and well combined. I get better results with a food processor.

Add the butter and pulse to combine. Add the salt, pepper, and fresh thyme or rosemary. Combine well.

Scoop the mixture out onto a board covered in plastic wrap. Roll into a log, approximately 12-13 inches long. by wrapping the plastic wrap onto itself. Refrigerate for several hours or freeze for 30-60 minutes.

Preheat your oven to 350 degrees F. Slice into 24 crackers. Bake on a parchment or silicone-lined baking sheet for approximately 15-25 minutes, until browned. Cool in the pan for a couple of minutes, then move to a wire rack to cool completely.

Store in an airtight container for 3-5 days.

Some Frequently Asked Questions 

Can I use a different type of flour besides almond flour?
Crackers can be made with many kinds of flour.  While almond flour works best for a low-carb option, you can experiment with other flours to make a variety of crackers.  Keep in mind that using a different flour might alter the texture and will change the carb content.

I don't have fresh herbs. Can I use dried herbs instead?
Absolutely!  Substitute dried thyme or rosemary to your taste in the recipe.

My crackers aren't as crispy as I'd like. What went wrong?
There are a couple of possibilities.  First, the thickness of each cracker slice will impact your cooking time and the crispiness of the crackers.  Secondly, make sure your oven temperature is accurate and preheated fully before baking.  If the crackers are still a bit soft, you can try letting them cool completely on the baking sheet and then crisping them up for a few extra minutes in a low oven (around 200°F) until they reach your desired texture.

How long will these crackers stay fresh?
Stored in an airtight container at room temperature, your homemade Parmesan Herb Crackers will stay fresh for up to a week.  I like to use them within three days for the best taste and texture. 

Can I add other ingredients to the dough for extra flavor?
 Yes!  Feel free to get creative and personalize the recipe to your taste.  Here are some ideas:
* A pinch of red pepper flakes for a spicy kick
