  1. Preheat your oven to 42 degrees F. Line your muffin tin with cupcake liners.
  2. Peel and dice the apple.
  3. Melt the butter. Mix together the egg, milk, and melted butter.
  4. Combine the flour, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients, all at once. Mix to combine.
  6. Top with Turbinado sugar, optional for crunch.
  7. Scoop the batter evenly into the muffin cups. Bake for 15-20 minutes, until a toothpick inserted in the center comes out clean.
