Roasted Vegetables for Oven or Grill

- Preheat your oven, or grill to 425 degrees F. Clean the mushrooms and cut them in half. Cut the zucchini into chunks about the same size as the mushrooms.
- Cut the pepper into long slices and then in half. Slice the onion.
- Spread the vegetables onto a sheet pan if cooking in the oven, or into a bowl if grilling.
- Mince the garlic, or use a garlic press. Add the garlic to the vegetables.
- Sprinkle the vegetables with olive oil, salt, and pepper. Toss to be sure the vegetables are well-coated.
- Place the sheet pan in the preheated oven on the center rack and cook for approximately 30 minutes, until the vegetables are tender. For the grill, spread the vegetables on a grill pan and cook until tender.
