Oven Roasted Brussels Sprouts

Roasting Brussels sprouts in your oven is one sure way to get family members to eat their vegetables. This is my tried and true recipe for oven-roasted Brussels sprouts.   

You'll be surprised how fast these Brussels sprouts disappear from the table when you prepare them this way.  I continue to be surprised when family and friends ask me to make them for our gatherings.

One of the keys to super flavorful roasted Brussels Sprouts is preparing them in advance.  This will allow time for the flavor of the onions, garlic, and bacon to blend throughout.  

Mix all the ingredients together at least an hour in advance but even the day before will work.

Make these oven-roasted Brussels sprouts for weeknight dinners or any special occasion meal.  They are a delicious side dish for any occasion. I like to add baby carrots for a delicious vegetable side dish for Easter. Add chunks of butternut squash for a festive Thanksgiving side dish.

Tips for Success

Use frozen bacon for this dish.  It is so much easier to cut the bacon into little bits when it is frozen.  You'll want the pieces of bacon to be very small because they will distribute well throughout the dish and crisp nicely as it roasts.

It makes a difference how you cut your onion. I am specific about the way I cut my onion, too.  I think it makes a difference to the end result.  Cut the top and bottom off your peeled onion.  Cut the onion in half from top to bottom and then cut each half into thin wedges.  This allows the onion to caramelize and not burn at the oven high temperature.

High oven temperatures always produce the best results. I've tried lower temperatures when trying to cook my Brussels sprouts along with my meat entree, but the Brussels sprouts don't have as much flavor as when roasted at 400 or 425 degrees F.

Don't crowd the pan. Finally, and perhaps my most important tip, is spreading the ingredients out in your pan.  Do not crowd the ingredients.  

Use a sheet pan for best results. A low-sided sheet pan works best because you'll have plenty of room for the ingredients and the low sides allow the heat to circulate well.  One sheet pan will work for four to five servings.  Use two sheet pans for six to ten servings.

Jazz up your Brussels sprouts. Try adding cut-up potatoes or sweet potatoes for a twist. Oh, so good!

How to Roast Brussels Sprouts in the Oven

You will need:

  • Brussels Sprouts, bottoms trimmed, cut in half
  • Olive oil (about 1/4 cup)
  • Garlic, minced (3-4 cloves)
  • 1 medium onion, cut into chunks
  • 2-3 slices of bacon, chopped
  • Salt and pepper to taste
  • Optional-any other seasonal root vegetables
Toss all the ingredients together and let marinate for about an hour.  Spread on a sheet pan.  Roast in a preheated, 425 degrees F oven for 20-25 minutes, or until tender.

How to Make Jazzed-Up Roasted Brussels Sprouts

You can customize your Brussels sprouts side dish very easily by adding any seasonal vegetables.  Just choose a vegetable that will cook in the same amount of time as the Brussels sprouts.  Here  are some of my favorite ideas:

For an Easter Side Dish: Add baby carrots
For a Thanksgiving Vegetable Side Dish: Add chunks of butternut squash or sweet potato
For a Christmas Side Dish: Add chunks of red bell peppers and garnish with pomegranate arils or dried cranberries.

Oven Roasted Brussels Sprouts

A simple recipe for making delicious oven-roasted Brussels sprouts flavored with onion, garlic, and bacon.

Ingredients

Instructions

  1. Cut the bottoms off your Brussels sprouts and slice them in half. Place in a bowl.
  2. Finely chop the cloves of garlic, and slice the onion into wedges. Dice the bacon (freezing the bacon first makes this easy).
  3. Add the garlic, onion, and bacon to the bowl with the Brussels sprouts. Mix well to distribute the ingredients. Drizzle with olive oil and season generously with salt and pepper. Mix again to ensure the olive oil and seasonings are well distributed. Cover and set aside for at least one hour.
  4. Spread the ingredients on a sheet pan being careful not to crowd.
  5. Roast the vegetables in a preheated 400-degree F oven for 30-40 minutes, until Brussels sprouts are well-browned and the bacon is crisp. Periodically give the Brussels sprouts a stir while they are cooking.
  6. Don't rush the cooking process. You want your Brussels sprouts to get really brown and crispy on the edges. That caramelization creates great flavor.

Notes

Always use a sheet pan to roast your Brussels sprouts.

Spread the Brussels sprouts out for the best flavor and crispy bits. Crowding will steam them.

You can roast your Brussels sprouts anywhere from 375 degrees F to 425 degrees F if you are cooking something else at the same time. Just know that they will take longer at 375 degrees F and less time at 425 degrees F.
