Beef short ribs can be pricey, so make sure you are getting good ribs with plenty of meat on the bone. You want fat for flavor, but you won't be eating the fat.
You'll want to make this meal when you have a full day because short ribs take four to five hours to cook in your oven or slow cooker. I prefer my slow cooker but the oven works just as well.
You can make short ribs ahead. Making the short ribs a day in advance is even better because you will have time to chill the sauce and separate the fat. Then you can either serve it as an au jus or thicken it to serve as a gravy.
Also, make sure you have a nice bottle of dry red wine on hand. It makes a difference to the flavor so you won't want to leave it out.
Brown the short ribs on all sides as your first step. Searing short ribs is important for color and depth of flavor.
Don't try to rush the cooking process. Short ribs need to cook low and slow and for a long time to break down the tough connective tissue. Your patience will be rewarded.
Serve your short ribs over mashed potatoes or buttered noodles. A green vegetable will complement the dish nicely.
