Cranberry Oatmeal Cookies |
The tartness of the dried cranberries offsets the sweetness of a traditional oatmeal cookie.
Add the crunchy goodness of toasted walnuts and you have a winner of a cookie.

Cranberry Walnut Oatmeal Cookies
- 14 tablespoons unsalted butter, melted
- 3/4 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon kosher salt
- 3 cups old fashioned oatmeal
- 1 cup dried cranberries
- 1 cup walnuts, toasted and chopped

Preheat your oven to 350 degrees F.
Spread one cup of shelled walnuts on a baking sheet and toast in the oven for 5 minutes. Remove from the oven, cool and chop. Set aside.

When making these cookies I decided to try a technique I used with a recent batch of chocolate chip cookies. For those cookies the butter was melted before mixing with the sugars and eggs. I melted the butter in the microwave and then added it with the sugars to the bowl of my mixer. Mix the sugar and butter together until well combined. Add the eggs and vanilla and mix together for 30 seconds. Then set your timer for 3 minutes and let the sugar and egg mixture sit. After the 3 minutes mix again for 30 seconds and then let sit again for 3 more minutes. Repeat.

Mix together the flour, baking soda, cinnamon and baking soda. Add the flour mixture to the butter and sugar mixture all at once. Mix together just to combine. Add the oatmeal, cranberries and walnuts. Stir well to combine.

Using a cookie scoop, place cookies on an ungreased baking sheet and bake on pan at a time for 12-15 minutes each. In my oven these cookies took 15 minutes. Check your oven and adjust the time accordingly.

These cookies do not spread as they bake on the cookie sheet. The resulting cookie was crispy on the outside, chewy on the inside with a nice balance of sweetness and tartness.

My most favorite cookie is oatmeal raisin but I think if I make these, I may have a new favorite. I may have to taste test this recipe at work....my coworkers really enjoyed the brownie taste test!!
