I love to make this recipe ahead so I'm always ready for a visit from my granddaughters. They love the sweet, cinnamony taste.  Having a loaf (or two!) stashed away in the freezer ensures I'm always prepared to greet them with a delicious treat. 

A Quick Bread with an Amish Tradition

Amish baking holds a special interest for home cooks. Their recipes are known for using simple, high-quality ingredients to create soul-warming comfort food. 

This Amish Cinnamon Quick Bread is no exception. Packed with warming cinnamon spice and a touch of sweetness, it's a breakfast or snack that everyone will love. 

Simple Pantry Staples with a Twist

The beauty of this recipe lies in its use of pantry staples. You likely have most of the ingredients on hand already! Just gather your all-purpose flour, baking soda, sugar, butter, an egg, cinnamon, vanilla,  and buttermilk.

Buttermilk, a common ingredient in quick breads, can sometimes be missing from the fridge. No worries! This recipe offers a fantastic substitute that uses a combination of sour cream and milk. 

Here's how it works: simply whisk together ¾ cup sour cream and ¼ cup milk. Let the mixture sit for 5 minutes, allowing the acidity of the sour cream to mimic the tang of buttermilk. Here's another buttermilk substitute using milk, vinegar, or lemon juice.

How to Make Amish Cinnamon Quick Bread

1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or oil. 

2. In a large bowl, cream together the softened butter, ¾ cup granulated sugar, and ¼ cup packed brown sugar until light and fluffy (about 2-3 minutes). This step incorporates air into the batter, resulting in a light and airy crumb.

3. Beat in the large egg and teaspoon of vanilla extract until fully combined.

4. Now, for the buttermilk substitute! Add the ¾ cup sour cream and ¼ cup milk mixture, stirring well. 

5. In a separate bowl, whisk together the flour, baking soda, and ½ teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Overmixing can lead to a tough bread.

6. In a small bowl, combine ⅓ cup brown sugar and 1 ½ teaspoons of cinnamon for the filling and topping.

7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Gently swirl the cinnamon sugar into the batter using a butter knife. This creates pockets of delicious cinnamon flavor throughout the bread.

8. Add the remaining half of the batter on top, smoothing it out evenly. Sprinkle the remaining cinnamon sugar mixture over the top layer and swirl it in with the butter knife.

9. Drizzle 2 tablespoons of melted butter on top of the loaf for added richness and a golden brown crust.

10. Bake the bread for 50-70 minutes, or until a toothpick inserted in the center comes out clean. 

11. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Freezing for Future Breakfasts and Snacks

This Amish Cinnamon Quick Bread freezes beautifully, making it the ultimate make-ahead breakfast or snack option. 

Once the bread cools completely, wrap it tightly in plastic wrap. For longer storage, place the wrapped bread in a freezer bag and store it in the freezer for up to 3 months. 

When you're ready to enjoy it again, simply thaw the bread overnight in the refrigerator or at room temperature for a couple of hours. 

Your Cinnamon Quick Bread Questions Answered

Can I substitute another type of flour for all-purpose flour?

While all-purpose flour is ideal for this recipe, you can substitute whole wheat flour for a more rustic texture.  Just be aware that the bread may be slightly denser.  Try using a blend of half all-purpose flour and half whole wheat flour for the best of both worlds.  Gluten-free flour alternatives won't yield the same results.

My bread isn't baking all the way through. What could be wrong?

There are a couple of possibilities. First, ensure your oven temperature is accurate. An oven thermometer can help you verify this. Secondly, be sure not to overmix the batter. Overmixing can lead to a tough and dense bread.  Finally, baking times can vary slightly depending on your oven or the size pan you are using. Start checking the bread for doneness at the 50-minute mark with a toothpick. 

How long can I store the bread at room temperature?

The bread will stay fresh at room temperature for up to 2-3 days. Wrap it tightly in plastic wrap to prevent it from drying out.

How can I reheat the bread?

You can reheat individual slices in the microwave for a few seconds or in a toaster oven for a minute or two until warmed through. Alternatively, wrap the entire loaf in aluminum foil and warm it in a preheated 300°F oven for 10-15 minutes.
