Italian Sausage and Mushroom Pizza

Another Friday night, another pizza.  Yum!  Tonight's pizza is made with hot Italian sausage and mushrooms.  Our hot sausage is locally made and includes soupy meats and spices.  Soupy, otherwise known as sopressata is a local Italian cured dry sausage.

This is a hearty pizza, with plenty of zip and heat. We like our pizza with a little heat, but you can use a sweet sausage as well.   Use the best sausage you have in your area and your pizza will be equally delicious.   Here's how I make our pizza.

Italian Sausage and Mushroom Pizza
Ingredients
Italian Sausage Pizza Ingredients
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 ounces tomato sauce (your favorite jarred)
  • 8 ounces Italian hot sausage, browned and drained
  • 2 ounces sliced mushrooms
  • 4 ounces shredded mozzarella cheese
  • Parmesan cheese, freshly grated
  • Parchment paper

Directions
Make your pizza dough earlier in the day.  Brown the hot sausage and drain.  Set aside.  Place a pizza stone on the bottom rack of your oven.  Preheat the oven to 500°F.  Let your pizza stone heat up to be good and hot.

Place the pizza dough on a piece of parchment paper and press to form into a round, 10"-12" in size.

Spread the tomato sauce over the pizza dough.  Not too much.  Just enough.  You know what I mean.


Add The Pizza Sauce

Slice the fresh mozzarella cheese and distribute the slices evenly around the pizza.  Add the mushrooms and the sausage.  The amounts are flexible here.  Add as much or as little as you want.  That is what makes this your own pizza.  It's all good!

Now add the shredded mozzarella cheese and some freshly grated Parmesan cheese.  We're looking good!


Pizza Ready for The Oven

I use a flat cookie sheet to transfer the pizza to the oven and slide it onto the pizza stone.  Cook the pizza on the bottom rack of the oven for 12 minutes or until the crust is browned and crispy.  Exactly 12 minutes at 500°F is exactly the right time in my oven, but your oven may be different.

Let the pizza rest for 10 minutes before serving.  You can see from the picture that my pizza needed to rest to firm up the cheese a bit.  Yum!
