Healthy Breakfast and Lunch Ideas

I don't make New Year's resolutions but this month I've been focused on healthy eating and exercise.  If you are like me, the last couple of months of 2017 were a disaster for healthy eating and keeping to an exercise routine.  That's why I jumped at the opportunity to work with Naked Nutrition to share how I am making Naked Nutrition Whey Protein Powder part of my healthy eating diet this month.

Today I'm sharing two recipes that have become regular additions to my diet this month, one for breakfast and one for lunch.  Both include grass-fed whey protein powder from Naked Nutrition to help build lean muscle.  Smoothies are an easy way to incorporate protein powder into your diet, but did you know you can also bake with protein powder?

Breakfast Cookies to Start the Day

Breakfast is always a challenge for me.  I know it is important to eat breakfast every day, but I don't like to start my day in the kitchen.  I prefer quick and easy for breakfast.  Grab-and-go breakfast cookies are right up my alley and they offer portion control.  Each cookie is 106 cookies, so I like to have two to start my day. I love that I can make a batch of sixteen cookies and have them for eight mornings with my coffee.

These breakfast cookies are perfect to enjoy with my morning coffee because I love to dunk them.  I left the rolled oats whole in the recipe to give the cookies a hearty texture.  That makes me feel like I am eating something substantial for breakfast and helps me to feel satisfied for the morning. There is no added sugar in the recipe, so the only sweetness is from the chopped dates. I've had too much sugar in my diet lately and these cookies are helping to wean me off of the sugar. If you'd like a little more sweetness, add a teaspoon of Stevia.

I love that the only ingredient in the Naked Nutrition Protein Powder is grass-fed whey protein from pasture-fed dairy cows on small dairy farms. That means I can control all the ingredients in the recipe and the added protein will help build lean muscle and aid in recovery as I step up my exercise routine.

These cookies soften once they are stored in a sealed container.  They have a mild nutty flavor from the peanut butter and the oats that I like.  Every once in a while a bit of date sweetness comes through as a nice little surprise.

Peanut Butter Oatmeal Breakfast Cookies

Makes sixteen cookies, 106 calories each
  • 2 cups old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 2 scoops Naked Whey Protein Powder
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup finely chopped dates
  • 2 Tablespoons ground flax meal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract


Directions
Mix all of the ingredients together until well combined.  Place the bowl in the refrigerator to chill the batter for thirty minutes.

Preheat your oven to 325 degrees F.  Using a small cookie scoop, scoop the batter onto a parchment or silicone sheet lined baking sheet.

Bake the cookies for ten minutes, until the bottoms are lightly browned.  Cool completely,  Store in a tightly sealed plastic bag.

A Protein Smoothie for Lunch

If you've been visiting Just One Donna for a while you know that periodically I'll share a smoothie recipe.  That's because I love smoothies and they are a regular for me in my lunch rotation.  I enjoy packing my smoothies with whatever fruits and vegetables are in season.  It's a great way to easily add a lot of fresh fruit and vegetable nutrition to my diet. Adding Naked Nutrition Whey Protein Powder is a way to make my fruit and veggie smoothies even better for you.

Fresh blueberries happened to be on sale this week at my grocery store so I jumped at the opportunity to make this Blueberry Protein Smoothie.  I added a half of a nectarine and a healthy handful of baby spinach for my additional fruit and vegetables.

You'll usually find flax meal in all of my smoothie recipes.  I like to add it for the nutrients and the additional fiber it provides.  I'll often add a spoonful of almond butter for protein, but for this recipe, I chose to use Naked Nutrition Whey Protein Powder instead.

The protein powder thickened the smoothie to a very enjoyable consistency.  I like a thick smoothie.
During the warmer months of the year, I like to freeze my fruit for my smoothie so the smoothie will be thick.  I really don't want a frozen smoothie in the winter, so the thickening power of the whey protein powder is greatly appreciated.

Serves one


  • one cup fresh blueberries
  • 1/2 small nectarine
  • 1 Tablespoon ground flax meal
  • 1 teaspoon Stevia
  • 1 scoop Naked Whey Protein Powder
  • one handful fresh baby spinach
  • 8 ounces unsweetened vanilla almond milk

Directions
Place all of the ingredients in your blender in the order listed.

Cover the blender and blend until smooth and well combined.  Serve immediately.
