Excitement is growing in our house for the big game. It's always more fun when your football team is playing for the championship, isn't it? You can bet New Englanders will be glued to their TVs and eating lots and lots of game-day food. These Cheeseburger Stuffed Mushrooms are tasty bites, a perfect appetizer for game-watching. They'd also be a great appetizer for a BBQ, but there aren't many BBQs happening in New England in January and February!
These Cheeseburger Stuffed Mushrooms taste just like mini cheeseburgers, without the buns. The filling has all the good things I like in a cheeseburger. I added onions, garlic, and chopped mushroom stems with a shake or two of Worcestershire sauce and salt and pepper to taste the ground beef.
The key with these mushrooms is not to precook the filling. You want the burger filling to brown in the oven and develop a bit of crunch on the top. Then add a little bit of chopped pickle and the cheese of your choice and cook for about five more minutes until the cheese is all melty and yummy. I like to serve them with some extra chopped pickles and chopped tomato.
You can make an assortment of cheeseburger flavors by substituting blue cheese or Swiss cheese, adding crisp bacon bits, and a little jalapeno pepper...You get the idea.
Makes approximately 16 stuffed mushrooms
Brush away any dirt that is on the mushrooms. Remove and chop the stems. Heat the oil in a medium-sized frying pan over medium heat. Add the chopped onion and 1/2 cup of the mushroom stems. Cook until they begin to soften, about two minutes. Add the garlic and a little salt and pepper. Cook for another two minutes. Set aside to cool.
Preheat your oven to 375 degrees F and grease a baking sheet. In a small bowl, combine the ground beef, onion mixture, and a couple of shakes of Worcestershire sauce. Add a pinch or two of salt and pepper.
Fill each mushroom cap with the beef mixture and place on the baking sheet. Cook on the middle rack of your preheated oven for 25-30 minutes, until well-browned. Top each mushroom with chopped pickle and shredded cheese. Return to the oven for three to five minutes, until the cheese has melted. Serve hot.
