One Pot Sausage and Peppers |
A one pot meal that can be served whenever it is convenient is what you need on for those crazy nights...like hockey practice night...or parent-teacher conference night...or...well, I think you get the point.
Some nights we just need an easy, satisfying meal.
One Pot Sausage and Peppers
Serves 6-8
The One Pot Sausage and Peppers Ingredients |
- 2 1/2 pounds sweet Italian sausage links
- 3 tablespoons olive oil
- 1 jalapeno pepper
- 1 large red bell pepper, sliced thinly
- 3 medium green bell peppers, sliced thinly
- 2 large onions, sliced
- 4 cloves of garlic, minced
- 2 tablespoons tomato paste
- 1/2 cup white wine
- 1 (15-ounce) can diced tomatoes
- 1 (28-ounce) can crushed tomatoes
Directions
Place the sausages in a large skillet over medium heat. Add 2 cups of water and 1 tablespoon of olive oil. Bring the water to a boil and and cook the sausages allowing the water to boil away.

This will allow the sausages to cook gently in the water, remaining tender and juicy, while the casings will become browned. Once the water boils away, turn the sausages to be sure they brown evenly on all sides. Remove the sausages from the pan.

Heat the rest of the olive oil in the same skillet. Add the peppers, garlic, and onions. Season with 1 teaspoon salt and 1/2 teaspoon pepper to start. Cook the pepper mixture until the peppers begin to soften. Add the tomato paste and wine. Cook for 2-3 minutes. Stir in the tomatoes and simmer the mixture for 15 minutes or until the peppers are tender.
