The other day I was chatting with a friend about favorite recipes. When I say favorite recipes, I mean the tried and true ones. You know the ones. They are the recipes you turn to over and over again because you know your family likes them, they are relatively easy to pull together and you can be confident in your end result.
Many of us turn to chicken as the building block of a healthy, satisfying dinner for our families. I know I do. Here are five of my favorite chicken recipes. These chicken recipes never fail me.
Five Favorite Chicken Recipes
Roast Chicken with Rosemary was one of the first chicken recipes I posted on Just One Donna. That's because it is a rare day when you can open my refrigerator and NOT find a roast chicken in there.
I like to keep a roasted chicken on hand because that means I always have a meal at the ready. I can whip up a quick salad, a sandwich, a soup or who knows what. It just makes my life easier to have cooked chicken on hand.
Parmesan Breaded Chicken is a tasty, easy to prepare chicken dish that takes about an hour from prep to table.
I like to make this dish with bone-in chicken, but it can also be made with boneless chicken breasts or thighs.
I often make Parmesan breaded chicken when I have to feed a crowd. It can be prepared in advance and baked in the oven without much attention from you. That way you can focus on your guests.
Weeknight Chicken Piccata is a meal I prepare to treat myself.
I love chicken piccata. I like to order it when I go out to eat and I love being able to whip up a quick and tasty version at home.
This has been a regular in our family's meal rotation for years and years.
Easy Chicken Cacciatore is a meal I turn to when I'm wanting to kick up the flavor palate. When you are getting tired of eating chicken, spice it up a bit with chicken cacciatore.
Served with some pasta and a side salad you'll have a hearty, healthy meal. Make your pasta one of the whole grain choices and introduce a healthy dose of fiber.
Easy Chicken Parmesan is perfect for freezing. When I make this dish I often double or triple it and freeze the extra meals. That way, when I'm having a busy day I can rely on a meal already prepared and waiting in the freezer.
To make it ahead, all you need to do is prepare it to the point of oven readiness, cover it in plastic wrap, then aluminum foil. Pop it in the freezer until you are ready to use it.
Easy peasy, thank you very much!
