New England has a proud fishing heritage with many of the early settlers choosing to plant their roots along the shoreline.  For over 400 years the New England fishing industry has been known for its abundance of ground dwelling fish like haddock and cod.  As fishing methods changed and became more efficient the sustainability of the fish stocks became threatened.  As a result, New England's fishing industry is threatened.  With this in mind, I wasn't surprised to see that while the cod in my grocer's case was from the United States it was from the Pacific and not the Atlantic.

Is Pacific cod a good choice?  I checked my Monterey Bay Seafood Watch Guide and found that U.S. cod from the Pacific is rated a best alternative.  Imported Pacific cod is listed as a fish to avoid, so knowing that the cod I was buying was from the U.S. was an important distinction.  Do you want to be sure you are purchasing your fish responsibly?  You can print the guide for your region by clicking on the link, or if you have a smart phone you can download an app.

My plan in purchasing the cod was to bake it, flavored with a little lemon and buttered bread crumbs.  Baked cod is a favored dish on restaurant menus in the Northeast.  It is very easy to make at home and takes just a few ingredients.

Baked Cod

Baked Cod Ingredients
  • 1 1/2- 2 pounds cod fillets
  • 1 lemon, zested
  • 1/2 cup fresh bread crumbs
  • 1/2 cup panko
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons unsalted butter
  • salt and pepper to taste

Directions
Preheat the oven to 375 degrees F.  Rinse the cod fillets and pat them dry.  Place the fish in a buttered casserole dish, folding the thin tail section under.  Sprinkle the fish generously with salt and pepper.  Squeeze the juice of the lemon over the fillets.

In a small bowl, melt the butter in your microwave oven.  Add the bread crumbs, panko, chopped parsley and lemon jest.  Using a fork toss the mixture together until well blended.  Spoon the mixture over the cod fillets.

Bake the cod, uncovered, on the center rack of your oven for 20-25 minutes until the bread crumbs are browned and crispy and the fish flakes easily.

  2. This looks absolutely divine!!!! I recently became a big fan of cod since Wendy's started serving their cod filet sandwiches. I am quite certain that your cod is better! Another recipe I will be saving to cook for my hubby!

    1. I like this dish because it is healthy and light. You can adjust the butter to reduce the calories, but you'll sacrifice some flavor.

    1. I've had some trouble getting nice green beans locally, but that situation seems to be changing with the spring. Can't wait to get fresh ones straight from my garden though!
