Spiced Chili-Lime Salmon Fillet

Calling all salmon lovers....calling all salmon lovers!  Salmon is a favorite dinner selection of mine and I hope yours as well.  I'm going to be eating salmon two or three times per week in January, as I cut back from the indulgences of Thanksgiving...Christmas...New Year's Eve.  Packed with omega three oils, salmon is a smart and healthy choice for everyone.

Spicy Chili-Lime Salmon Fillet
During the warmer weather months, I enjoy grilling my salmon on my gas grill.  I also enjoy my salmon cooked on my stove top inside.  I usually save my stove top recipes for the colder months of the year, and I think January qualifies as a colder month here in the Northeast.  This is also a quick dinner...in the door and on the table in twenty minutes or less.  How good is that!  You've got to love that!

Very Simple Ingredients
Spiced Chili-Lime Salmon Fillets
Print Recipe
Serves 2
  • 2 4-6 ounce salmon fillets, skin on, rinsed and dried well
  • 1 teaspoon olive oil
  • 1 teaspoon butter, unsalted
  • 1/2 lime
  • 2 slices chili lime butter

Directions
Heat a heavy skillet.  I like to use my cast-iron pan over medium-high heat.  Add the olive oil and butter to the pan.  Season your salmon fillets generously with salt and pepper.  Place the flesh side down in the hot pan.

Sear the fillets for 3-4 minutes, until a lovely, brown crust forms on the fish.

Mmmm, Nice!
Turn the fish over with a spatula, cooking the skin side for another 3 minutes, until crispy.  Top each fish fillet with the sliced chili-lime butter.  Cover the pan to melt the flavored butter.  Cook for two more minutes.

Top with the Chili-Lime Butter

Remove the pan from the heat and squeeze half a lime over the two pieces of fish for a fresh pop of flavor.

Squeeze Some Lime Juice
Serve your salmon fillet with your favorite green vegetable for a delicious, healthy dinner.

  4. Happy New Year Donna! It just so happens that I purchased fresh salmon from the supermarket yesterday that I intend to cook tomorrow. I was going to use my usual recipe, but I actually have all of these ingredients in my kitchen. Wait....gotta make sure I have the ingredients for the chili lime butter! Heading over there now!

  6. Pro Diva, LOL...You will love that chili-lime butter. Keep it on hand and you'll always have a flavorful, quick meal. I love it on corn on the cob as well. That is a family favorite.
