|Grilled Marinated Tomatoes|
I especially like these grilled tomatoes as one of the components of my marinated vegetable platter. The vibrant color of the tomatoes makes the platter pop visually.
|Marinated Tomato Ingredients|
- 6 ripe tomatoes, cut in half horizontally
- 1/4 cup extra virgin olive oil
- 2 Tablespoons red wine vinegar
- 2 Tablespoons fresh basil, chopped finely
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
Preheat your grill. Combine the olive oil, vinegar, basil, garlic, salt and pepper in a small bowl. Stir to combine. Set aside.
Place the tomatoes, cut-side down, on the grill. Grill until they start to bubble and blister, 4-5 minutes. Carefully turn the tomatoes over and grill for two minutes more.
